Vin Brulé with St Maur Wines

Winter is gripping us with the cold winds and frosty mornings and while our first response is to snuggle up next to the fireplace with some comfort food and wine, why not try a Vin Brulé with one of our fine reds. Vin Brulé is soul-soothing, bone-warming hot drink to enjoy on cold icy days. After a glass of this spiced goodness, you’ll soon forget about the weather outside.

Here is St Maur’s recipe for  your own Vin Brulé !

Ingredients 

  • 750ml St Maur Cabernet Sauvignon or Cabernet Sauvignon/Merlot 
  • 50g castor sugar
  • ½ peel of one lemon
  • ½ peel of one orange
  • 1 star anise
  • 1 cinnamon stick
  • 5 cloves
  • 1 tsp fresh nutmeg

Method 

  • Place all ingredients except the wine into a large saucepan and place on medium heat. Add just a small glass of red wine to the pan to ensure the sugar is covered and let it cook for 4-5 minutes until the sugar dissolves.
  • Bring it boil to achieve a red wine syrup. This should let all the spices infuse well.
  • Once the mixture is ready, pour in the remaining wine and turn down the heat. You don’t want the wine to boil otherwise all the alcohol will evaporate!!! Let it simmer for 5 minutes and serve hot with slices with fresh orange.
